• 1 Pint Padron Peppers
  • ¼ Cup Olive Oil
  • 1 Tablespoon Chipotle Pepper power
  • 1 Tablespoon. Cayenne pepper
  • OR
  • 2 Tablespoons of Cajun spice
  • Sea Salt to taste

Grilled Padron Pepper make a great side for southern, Mexican and bean dishes. We  love to grill them to spice up our dinners. Best to buy them  in season, available late spring through the summer. Locally, we find them at Whole Foods, farmers markets and Trader Joe’s.

Directions:

  1. In a bowl, place padron peppers
  2. Pour olive oil over padron peppers just enough to cover lightly
  3. Mix the padron peppers around until covered well with oil
  4. Add evenly the chipotle pepper power, cayenne pepper Or use pre-mixed Cajun spice
  5. Add evenly sea salt
  6. Mix to coat evenly over padron peppers
  7. Grill or place in frying pan and cook until padron peppers have softened
  8. Enjoy!
