- 1 pound Corona Beans beans, soaked overnight
- 2 tablespoons extra virgin olive oil
- 1 medium yellow onions, peeled and chopped
- 6 chopped mushrooms of choice (optional)
- 4 cloves garlic, peeled and chopped
- 4 roma tomatoes diced
- 1 7oz. jar or can of tomato paste
- 3 cups vegetarian broth
- 3 bay leaves
- 1 teaspoon dried Italian seasoning
- 1 teaspoon dried or fresh thyme
- 1 handful of parsley leaves
- 1 teaspoon red pepper flakes
- 1 teaspoon sugar
- Salt and peper to taste

The beans are slow cooked in a rich spicy tomato sauce until creamy and tender. They can be server over rice, on toasted bread or in a bowl.
Directions
- Chop onions and garlic and brown in olive oil.
- Add mushrooms and brown
- Place the remaining ingredients in a large slow cooker or in a big pot. If a pot is used add and extra cup of water and check every hour, may need to add a bit more water during cooking.
- Cook on med heat for 6 hours on high, or 8-10 hours on low. Taste and add more salt as needed.
- Garnish with freshly ground black pepper and a drizzle of olive oil.
