• 1 pound Corona Beans beans, soaked overnight
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onions, peeled and chopped
  • 6 chopped mushrooms of choice (optional)
  • 4 cloves garlic, peeled and chopped
  • 4 roma tomatoes diced
  • 1 7oz. jar or can of tomato paste
  • 3 cups vegetarian broth
  • 3 bay leaves
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon dried or fresh thyme
  • 1 handful of parsley leaves
  • 1 teaspoon red pepper flakes
  • 1 teaspoon sugar
  • Salt and peper to taste

The beans are slow cooked in a rich spicy tomato sauce until creamy and tender. They can be server over rice, on toasted bread or in a bowl.

Directions

  1. Chop onions and garlic and brown in olive oil.
  2. Add mushrooms and brown
  3. Place the remaining ingredients in a large slow cooker or in a big pot. If a pot is used add and extra cup of water and check every hour, may need to add a bit more water during cooking.
  4. Cook on med heat for 6 hours on high, or 8-10 hours on low. Taste and add more salt as needed.
  5. Garnish with freshly ground black pepper and a drizzle of olive oil.
