• Mock or Veggie Fish
  • 1 Veggie Tuna Roll or 1 package of Veggie Tuna Steaks
  • 1 Lemon
  • 2 Cloves of garlic, finely chopped
  • Olive Oil
  • Sea Salt and Pepper to taste
  • Tartar Sauce
  • 1/4 Cup Vegenaise or Eggless Mayonnaise
  • 2 Tbs. Sweet Pickle Relish
  • ½ tsp. Cayenne Pepper or to taste
  • Cajun Asparagus
  • 1 bunch Asparagus
  • Olive Oil
  • 1 Tbs Cajun powder

Another easy meal! And, especially good if you’re easing into a vegetarian lifestyle. The Soy Tuna is one of the better dishes to serve meat-eating guests. Or, if you are searching for something to serve vegetarian guests or to your family on Meatless Mondays, this is an excellent choice.

Asparagus makes an colorful vegetable side dish that is very low in calories and rich in folic acid, vitamin B-complex, vitamin-C, vitamin-A and vitamin K which is good for individuals with damage in the brain, including memory issues.

Below are ingredients used to make the “Fish and Chips” dinner.  The Veggie Tuna roll can be purchased in the frozen foods section of most Asian markets. Some Asian markets sell a package of two veggie tuna steaks but rolls are more common. I defrost the roll and break out the veggie tuna and refreeze what I don’t use. This was purchased at Ranch 99, an Asian market chain market in California. The Cajun spice, asparagus, sweet relish, and chips (steak fries) were purchased at Whole Foods. Veganaise is  vegan mayonnaise that has a wonderful taste. There are a number of other brands that you can try. Most stores carry at least one brand of eggless mayonnaise. Let me know if you have a favorite.

Directions:

Preheat grill or oven to 350º

  1. Defrost Veggie Tuna Roll and break apart 2 pieces of Veggie Tuna for each person.
  2. Break up remaining pieces of Veggie Tuna Roll and place in Plastic bags and refreeze.
  3. Mix  1 Tablespoon of Olive Oil for every 2 pieces of Veggie Tuna with juice of one lemon and evenly drizzle over Veggie Tuna
  4. Chop garlic and evenly place on Veggie Tuna
  5. Grill or broil Veggie Tuna on medium heat for about 5 minutes on each side.
  6. To make Tartar sauce mix the veganaise,  sweet pickle relish and cayenne pepper
  7. Wash and cut ends of asparagus
  8. Place in long bowl or on a plate  and cover lightly with olive oil
  9. Sprinkle Cajun powder evenly on top of asparagus and mix
  10. The asparagus can be grilled or cooked in a frying pan until it changes to a lighter green. Asparagus is   best if it’s not over cooked and only needs to be grilled for about 5 minutes on each side.
