• 1 Tablespoon olive oil
  • 1 yellow onion
  • 2 garlic
  • 6 - 9 baby bella mushrooms
  • 1 pound dry spaghetti (for Gluten free use GF spaghetti)
  • 6 fresh plum or roma tomatoes quartered
  • 1 tablespoons tomato paste (optional)
  • 1 tablespoon Italian seasoning
  • 1 pinch crushed red-pepper flakes
  • 6 leaves fresh basil, shredded
  • 12 cherry tomatoes to top
  • 2 tablespoons freshly grated parmesan vegan cheese
  • salt & pepper to taste

You can never go wrong with vegan basil, mushrooms and garlic pasta. Put all that together with a a tomato sauce, spices and a quality spaghetti and you get a quick and easy Italian dinner!

This is a wonderful plant based dish that everyone will enjoy, even friends that are not vegetarian. I’m always creating new recipes for vegan friends for when they have their family over for dinner, quite often those meals end up being meals I make for my family as well because they are so speedy and simple to make, and this pasta dish is one of the easiest dinners we make on a regular basis.

What makes baby bella mushrooms such a power player in this dish is that, for none vegetarians, they can still get that meaty richness, without actually having to eat meat!

This quick and easy recipe for Spaghetti With Mushrooms, Basil in a Tomato Pasta Sauce is a simple vegetarian pasta dish that will see you through many weeknight meals.

Directions:

  1. In a large sauté pan heat the olive oil on medium high, add chopped onion and chopped garlic. Cook until onion is soft. Add mushrooms and cook until they are soft.
  2. Add in chopped up plum or roma tomatoes and tomato paste (optional, for a richer sauces)
  3. Add in Italian seasoning, crushed red-pepper flakes, shredded basil,
  4. Cook for about another 5 – 10 min until all tomatoes are soft and spices have time to marry  with the sauce.
  5. Cook up pasta and add to tomato mixture, mix together, grate vagan parmesan cheese over top.
  6. Top with fresh cherry tomatoes and a couple of leaves of basil.
  7. Enjoy!
